Apricot puree is a thick and smooth product made by blending fresh apricots. In industrial production, apricots are first washed, peeled, and pitted. Then, they are thoroughly mashed into a uniform, soft texture and packaged in aseptic barrels.

This puree retains the natural fruit pulp and has a thicker consistency compared to apricot concentrate. To extend its shelf life, apricot puree is usually pasteurized.

The season of supply and production of apricot puree is directly related to the time of apricot harvest. Apricots in Iran are usually harvested in late spring and early summer (i.e. from June to early August).

Brix is a measure of the amount of sugar dissolved in liquids and is specifically used to determine the concentration and sweetness of food products, such as fruit purees. The Brix scale refers to the weight percentage of sugar dissolved in a liquid. For example, Brix 13 means that 13% of the weight of the liquid contains sugar.

In Apricot puree, Brix indicates the sweetness and concentration of the puree. A higher Brix value means greater sweetness and a higher concentration of sugar.
